Executive Chef

Mill River is seeking a talented http://x-tige.com/designers/muamua-fw13/ Executive Chef with experience designing and preparing high-end cuisine, as well as team management and organization of culinary operations. Their ideal candidate is a creative individual who is willing to participate in creating seasonal menus and designing new dishes. The Executive Chef will report to the Director of Culinary Operations, will lead their team in both culinary and customer service excellency, and effectively communicate with Mill River’s specialty kitchen staff to ensure proper food presentation and management. The successful applicant will be a professional individual who is dedicated to high food quality and will set high standards for themselves and coworkers around them.

Requirements for this position:

  • 5+ years culinary experience in a high volume, full-service restaurant
  • 2+ year education in field, or culinary school completion, is strong asset
  • Experience preparing multiple international cuisines
  • Knowledge of best practices for training kitchen staff and implementing kitchen procedures
  • High levels of creativity and reliability
  • Flexible schedule required
  • Familiarity with menu costing procedures
  • Knowledge of cooking equipment, cleaning procedures and maintenance
  • Understanding of various cooking methods, ingredients, equipment, and procedures
  • Excellent record of kitchen and staff management

General Duties:

  • Manage relationships with distributors and resolve issues with vendors
  • Follow the budget established by the Director
  • Ensure safety and sanitation practices in the kitchen
  • Manage kitchen staff and delegate tasks related to meal prep, cooking and delivering food to diners in a timely fashion
  • Maintain the schedule for kitchen staff
  • Monitor food and labour costs
  • Keep up with industry trends and create new recipes in collaboration with the Sous Chef
  • Train new and existing kitchen staff on the preparation, arrangement, and plating of dishes per the current menu
  • Ensure all staff members adhere to culinary standards, regulations, and speed of work
  • Track, record and replenish inventory as needed
  • Cross-train kitchen staff on multiple stations
  • pricing menu items and well rounded in kitchen finance and inventory control
  • Research new developments in cuisine and apply knowledge to your repertoire

Day-to-Day:

  • Assisting in the preparation and design of all food and drink menus
  • Producing high quality plates both design and taste wise
  • Ensuring the kitchen operates in a timely way that meets Mill River’s quality standards
  • Resourcefully solve any issues that arise and seize control of any problematic situation
  • Manage and train kitchen staff and assess staff’s performance
  • Order supplies to stock inventory appropriately
  • Comply with and enforce sanitation regulations and safety standards
  • Maintain a positive and professional approach with customers and co-workers
  • Ensures a first in- first out rotation system and verifies all food products and properly dated and organized for quality assurance
  • Keeps cooking stations stocked, especially before and during prime operation hours
  • Create tasting menus for clients interested in contracting the food for different events (weddings, buffets, corporate dinners, catering etc.)

Job Term & Salary:
